Not a genius in baking, just love to because its so fun and I love giving out my treats to friends and family so thought I would share my all time favourite recipe with all of you. The thing I love about this cheesecake is that its not only easy but you can improvise a lot on your own, there isn't a need to strictly follow everything in the recipe. Its so much fun as well!! (Oh and I do feel I've been doing a pretty good job with it, never thought it could taste so good!)

1 2/3 cup. graham cracker crumbs
1/3 cup. butter, melted

12 oz. cream cheese, softened
2/3 cup. sugar
2 eggs, room temperature
1 cup. sour cream
2 tsp. vanilla essence

You need to prepare the crust first, it isn't that important following the exact amount of ingredients. Just get a whole pack of graham biscuits (or you can use wholemeal biscuits which I love). Make the biscuits into crumbs, smash them however you like! But make sure the crumbs are all smooth, no large bits here and there. Then mix them all up with softened butter. The amount of butter mixed with the crumbs should be just enough to allow the crumbs to be able to lay flat on your pan, without falling apart. Firmly press mixture evenly on bottom and bake at 350 degrees for 5 minutes.

Preheat oven to 350 degrees. After the crust is all ready, set it aside. In large bowl stir together cream cheese and sugar until soft and creamy; then beat in eggs, one at a time. Stir in sour cream and vanilla, blend well. Pour into the baked crust.
Bake 20-25 minutes until center jiggles slightly when pan is gently shaken (center will set). Transfer to wire rack. Let cool completely, cover with wax paper and refrigerate for at least 8 hours. Cut, serve and you're done!

And ah I'm sorry I know my cheesecake looks pretty different from what you get at cafes and what not, but this is home-made so its excuseable!! And what matters is it taste really awesome right?
