Ah life on my side has been pretty slow lately, just catching up with friends and pigging out a lot. Just thought I'd share one of the ideas for the leftover meatballs if you get to it..just heated them up for a few minutes in a toaster oven and got to making a super quick cream sauce of just full cream, an egg, some shaved parmesan, lemon zest and some juice from the lemon. Cook and drain the pasta, setting aside some of the cooking water Toss the pasta in the cream sauce and pour in a tablespoon or two of the cooking water. Top off with fresh parsley. Done!
