MOROCCAN CHICKEN

IMG_3993

I have lost count of the number of times I've made this in the past 2 weeks since I've discovered this recipe. Dream come true, so so so simple and even more delicious than it looks. I make my own yoghurt dip which is a mix of mayonnaise and yoghurt with cayenne pepper. This Moroccan chicken has been my fix for easy dinners that satisfy after a long day, goes perfectly in a wrap or with a salad.

Ingredients:
2 boneless chicken breasts (cut into bite sized pieces)
1 tablespoon of regular olive oil
2 tablespoons of paprika
2 tablespoons of ground ginger
2 and a half table spoons of ground tumeric
2 table spoons of cinnamon
Salt and pepper to taste
1/2 the juice of a lemon
Chopped parsley

Directions:
Season bite sized chicken pieces with salt, pepper and the olive oil
Mix all the spices in a bowl and pour over the chicken and mix until evenly coated
Grill chicken on a pan for several minutes (I personally love mine slightly charred)
Squeeze lemon juice over chicken and serve

Honestly, I've never followed any of the measurements of this recipe. I make so much of it and everyone loves it that my quantities are all messed up. You can of course, feel free to leave the chicken in the spice overnight or for a few hours for better flavour but they're still as delicious for last minute dinners.

*PS, I will be selling Moroccan chicken wraps and some other goodies this Saturday at Jordus 'Go Broke or Go Home' flea which will be located at:

Unity Centre, 51 Bukit Batok Crescent #09-20 Singapore (658077)

…..and I hope to see you there! It's just a simple sale so nothing in big quantities or whatsoever and I've always wanted to experience trying to sell some of my food and get feedback. I promise it will be delicious. So if you'll be there, make sure you come and give me some support or just say Hi!
